1. Croutons
Ingredients:
- Bread (ideally stale bread)
- Olive oil or melted butter
- Seasoning of your choice (salt, pepper, parmesan cheese, Italian seasoning)
Instructions:
- Preheat the oven to 375’
- Dice your bread into uniform sizes so that they cook at the same rate
- Toss with oil and seasonings
- Spread onto a baking sheet in a single layer
- Bake until golden and crispy (about 15-20 mins) and flip halfway so that they are baked evenly
- Remove from oven and let them cool
- You can store them in a sealed container for up to two weeks.
2. Bread pudding
Ingredients:
- 6 slices day-old bread, torn into small pieces
- 2 tablespoons unsalted butter, melted
- ½ cup raisins (Optional)
- 2 cups milk
- ¾ cup white sugar
- 4 large eggs, beaten
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
Instructions:
- Preheat the oven to 350 degrees F (175 degrees C).
- Place bread pieces into an 8-inch square baking pan. Drizzle melted butter over bread and sprinkle raisins over top.
- Whisk milk, sugar, eggs, cinnamon, and vanilla together in a medium mixing bowl until well combined. Pour mixture over bread, and lightly push down with a fork until all bread is covered and soaking up the liquid.
- Bake in the preheated oven until golden brown and the top springs back when lightly pressed, about 45 minutes.
3. Bread cookies
Ingredients:
- 3-4 slices of stale bread, ground into a powder
- 1 egg
- 7 tbsp. butter (softened)
- 3/4 cup flour
- 1/2 cup sugar
- 1/3 cup hazelnuts
- A pinch of salt
- A pinch of baking powder
- 6 oz chocolate of choice
Instructions:
- Heat oven to 350°F
- Reduce stale bread into a powder using a food processor
- Break chocolate into small pieces
- Put powdered through a sieve to remove larger crumbs (optional), and mix it with salt and flour. Add a pinch of baking powder.
- Add the butter and the egg, then mix it all together to form a dough
- Fold in the chocolate chips and the hazelnuts.
- Roll the dough into small balls and place them slightly apart from each other on a baking sheet (they’ll rise)
- Bake for 10-15 minutes and you’re ready to go!
4. Bruschetta
Ingredients:
- 1 loaf French bread preferably a couple days old, cut into 1/4-inch slices
- 1 tablespoon extra-virgin olive oil
- 8 tomatoes, diced
- ⅓ cup chopped basil
- 1 ounce Parmesan cheese, freshly grated
- 2 cloves garlic, minced
- 1 tablespoon balsamic vinegar
- 2 teaspoons olive oil
- ¼ teaspoon salt
- ¼ teaspoon black pepper
Instructions:
- Preheat oven to 400 degrees
- Brush both sides of the sliced bread with olive oil
- Place on a baking sheet and toast bread until golden brown
- Toss chopped up tomatoes, basil, cheese and garlic in a bowl, add olive oil, vinegar, salt and pepper.
- Spoon mixture onto bread and serve.
5. French toast
Ingredients:
- ⅔ cup milk
- 2 large eggs
- 1 teaspoon vanilla extract (Optional)
- ¼ teaspoon ground cinnamon (Optional)
- salt to taste
- 6 thick slices bread (stale)
- 1 tablespoon unsalted butter, or more as needed
Instructions:
- Whisk together eggs, milk, vanilla, cinnamon and salt in a bowl
- Heat pan over a medium heat with some butter
- Coat both sides of the bread in the egg and milk mixture, place on the pan and cook until both sides are golden brown. Serve.
6. Bread crumbs
Ingredients:
- Stale bread
Instructions:
- Toast the pieces in the oven until firm
- Then blitz them in a food processor.
7. Bread soup
Ingredients:
- Olive oil
- 1 large red onion, diced
- Kosher salt
- 1 pinch crushed red pepper flakes
- 3 garlic cloves, smashed and finely chopped
- 1 cup white wine
- 2 pounds tomatoes, diced
- 10 basil leaves
- 2 cups tomato juice
- 2 cups day-old bread, crusts removed and cubed
- 1/2 cup grated Parmigiano-Reggiano
Instructions:
- Place a pot over medium heat and coat the pot in olive oil. Add onions and season with salt and pepper.
- When onions are soft add the garlic and cook for 2-3 minutes. Then add the wine.
- Stir in the tomatoes and season with salt.
- When tomatoes are soft (12-15 minutes) add the basil.
- Puree the tomatoes and add the tomato juice and bread.
- Cover the soup over and reduce the heat to medium and cook for an additional 20 minutes.
- Serve with some cheese, basil and some olive oil.
8. Stuffing
Ingredients:
- 2 small onions diced
- 4 sticks of celery diced
- ⅔ cup butter
- ½ teaspoon ground sage
- black pepper
- salt to taste
- 12 cups bread cubes
- 3-4 cups chicken or vegetable broth
- 2 tablespoons fresh parsley
- 1 tablespoon fresh herbs sage, thyme, rosemary
Instructions:
- Preheat the oven to 350 degrees
- Melt the butter in a pan over medium heat and add onion, celery, ground sage and rosemary.
- Place bread cubes in a bowl and add the onion mixture as well as parsley and fresh herbs
- Pour broth over the bread cubes until they are moist but not soggy and toss. Season with salt and pepper to taste
- Put mixture in a baking dish and cover
- Bake for 35 minutes, uncover and bake for another 10 minutes
