Aquafaba is the liquid leftover from your chickpeas and in baking and cooking, it behaves very similarly to egg whites, making it the perfect plant-based substitute in this easy vegan chocolate mousse recipe. Aquafaba whips best with an electric stand mixer but you can do it by hand with a bit of elbow grease and some patience. You want your aquafaba to be very stiff - any liquidity and your mousse may not set.

Easy vegan chocolate mousse recipe
Makes 2
Ingredients
100g vegan dark chocolate
120ml of aquafaba (liquid from tinned chickpeas)
Method
Strain aquafaba from tinned chickpeas
Beat until stiff
Finely chop your chocolate and melt over a hot water bath, ensuring you use a heatproof bowl
Use as little heat as possible to get your chocolate to melt to prevent graininess
Fold your melted chocolate into the aquafaba
Divide your mousse into two glasses
Let it sit in the fridge until set (about 8 hours) and enjoy
How to remix your chocolate mousse
Add fruit
Avoid high-water content fruit which may make your mousse too wet. Dehydrated fruit, dried fruit and berries will be delicious in your mousse.
Make a zero-waste coulis
If you have fruit in the fridge going soft, make a coulis by cooking it with sugar and blending it until smooth.
Serve it like a dessert paté
Present your mousse with a shortbread biscuit and a homemade jam.
