Carrot cake is a cup of coffee's best companion but did you know you can save up your carrot scraps and make your very own zero waste carrot cake? It's National Carrot Cake Day and we think that's the best excuse to get your wooden spoon out.
Ingredients
Cake
225g self raising flour
150g light brown sugar
125g sultanas
150g carrot peels and grated carrot
1 grated orange rind
3 eggs
175ml sunflower oil
1 tsp mixed spice or (1/2 tsp cinnamon + 1/4 tsp of nutmeg)
Pinch of bicarbonate of soda
Cream cheese icing
225g cream cheese
375g icing sugar
1tsp vanilla extract
Method
Preheat your oven to 150˚C
Line a 15cm round cake tin with a double layer of baking paper
Beat eggs with the oil
Stir in sugar, sultanas, carrots and rind
Add all of your dry ingredients and stir well
Pour into tin, flatten top and bake for 1 hour
Allow it to cool before removing from tin
For icing, mix all your icing ingredients together until smooth and then gently smooth over the top of your fully-cooled cake
