Recipe: Turning Stale Bread Into Cookies

In their roadmap to less food waste, ReFED reported that grain products constitute 19 percent of food waste in our country (source). Leftover bread is one of the most commonly tossed out food items, but with a little creativity, we can transform stale bread into sweet treats... like these zero waste cookies. 

Time: 30min

For 10 cookies, you will need:

  • 3-4 slices of stale bread, ground into a powder

  • 1 egg

  • 7 tbsp. butter (softened)

  • 3/4 cup flour

  • 1/2 cup sugar

  • 1/3 cup hazelnuts

  • A pinch of salt

  • A pinch of baking powder

  • 6 oz chocolate of choice

Preparation:

  1. Heat oven to 350°F 

  2. Reduce stale bread into a powder using a food processor 

  3. Break chocolate into small pieces

  4. Put powdered through a sieve to remove larger crumbs (optional), and mix it with salt and flour. Add a pinch of baking powder.

  5. Add the butter and the egg, then mix it all together to form a dough

  6. Fold in the chocolate chips and the hazelnuts.

  7. Roll the dough into small balls and place them slightly apart from each other on a baking sheet (they’ll rise)

Bake for 10-15 minutes and you’re ready to go! Remember to store them properly in an air-tight container, or freeze them if you won't be eating them immediately (yeah right 😏)
