Breakfast
For the ultimate post-Thanksgiving breakfast (or any time really), try these turkey, avocado, cranberry, brie, and mashed potato waffle melts. Find the recipe right here.
For a vegetarian-friendly alternative option, you can make waffles out of the stuffing itself! The beauty of this recipe is that it will work with any kind of stuffing you’ve got. Lunch
For a really creative remix, we are loving these Thanksgiving Dumplings. They can easily be made vegetarian by omitting the turkey and would be delicious with any type of vegetable you have leftover beyond green beans.
For a quick, simple lunch we love making grilled cheese with cranberry sauce. We recommend brie with a bit of whole grain mustard, but really any cheese you have on hand will do the trick.
Dinner
These leftover turkey enchiladas are a low-fuss and delicious spin on the quintessential Thanksgiving sandwich. If you’ve got a lot of turkey leftover, but not so much stuffing and sides, classic enchiladas with salsa, beans, and cheese are always a good idea.
Shepherd's Pie is another wonderful way to use up leftover mashed potatoes and turkey. It’s easy to incorporate any additional leftover veggies - and even stuffing like in this recipe.
