Not only does it offer overripe bananas a triumphant second life, but it’s a healthy treat to enjoy whenever your sweet tooth strikes. And with just one ingredient, it couldn’t be easier to prepare. Scoop it plain into your favourite bowl, or change it up with our flavour variations in step 3.
Step 1: Choose your bananas
When it comes to nice cream, not all bananas are created equal. Overripe bananas have a sweet caramelised taste that will make your ice cream deliciously sweet. For this recipe, just remember one rule: the browner and spottier the better.
Step 2: Prepare them
Peel your bananas, chop them into coins, and freeze them for a few hours or overnight. Remember, you don’t have to make your nice cream straight away - you can leave the banana frozen for weeks, gradually adding more overripe bananas as you dig them from your fruit bowl.
Step 3: Add extra flavouring (optional)
Your nice cream will be delicious using just bananas, but there are lots of ways you can change it up. Add the following ingredients to create fresh new flavours. (Proportions based on using two bananas).
Mint chocolate chip
Add a few drops of peppermint extract before blending the coins, then stir through chocolate chips after blending. Lest you crave the minty hue of a classic mint choc scoop, add a handful of spinach leaves or a pinch of spirulina along with the peppermint extract. It won’t affect the taste, but it will up the green factor - and boost the nutritional value along the way.
Raspberry
Add 1/2 cup frozen raspberries.
Peanut butter
Add 2-3tbs peanut butter.
Chocolate
Add 1-2tbs cocoa powder.
Step 4: Blend it up
Empty your banana coins into your blender or food processor, and blend them until you have a creamy mass. If your blender is having trouble processing, try adding a few splashes of nut, oat or dairy milk. If the nice cream is looking a little runny, return it to the freezer for half an hour.
Step 5: Top and enjoy
You can eat your nice cream plain (delicious!), or you can top it with your favourite embellishments. A few ideas:
