Since 2019, we’ve been fighting food waste with Morrisons. And we’ve hit quite the milestone: 500,000 bags of unsold Morrisons food, saved from going to waste!
Typically, Morrisons Magic Bags are filled with a surprise selection of food: anything from baked treats to bottles of milk. There’s usually some delicious ripe fruit in there too. So to celebrate our half-a-million milestone, we’ve developed a cake that’s perfect for using up that fruit - whatever it may be - with a fail-safe recipe that simply calls for 800g of chopped fruit.
Got some pineapple and mango? Whip up a tropical fruit cake. Scored some blueberries and carrots? Add some cinnamon and mixed spice, and try out a blueberry carrot cake. Have fun, and enjoy.
Ingredients
3 eggs
250g melted butter, vegetable, or melted coconut oil
100g sugar
150g brown sugar
370g plain flour
Large pinch salt
3 tsp spice: think mixed spice, cinnamon, ground ginger, or nutmeg, or a combination of all
1 tsp baking soda
1/2 tsp baking powder
800g chopped fruit of your choice
Instructions
- Preheat the oven to 180C, and grease and line two 23-cm cake tins, a brownie pan, or two loaf tins. Chop the fruit into small chunks - about 1cm.
- In a large bowl, whisk together the eggs, oil/butter, and sugars.
- Add the dry ingredients, and fold to combine. Then, fold in the chopped fruit.
- Transfer to tins, then bake for one hour or until a toothpick comes out clean.
