Ingredients
3 tbsp olive oil
1 tbsp tomato paste
1 tsp MSG (optional)
1 tbsp Marmite
100ml red wine
1 tsp soy sauce
600ml stock of your choice
2-3 carrots
2 onions
5 cloves garlic
2 cups celery tops, carrot tops, carrot skins, onion skins and any other root vegetable tops and skins
1 cup mushroom stalks
4 bay leaves
Generous amount of rosemary
1/2 tsp salt
Pepper
2 tbsp plain flour
Beef/lamb bones (optional)
Method
Warm olive oil in a heavy-bottomed pan
Add small cubes of veg and veg skins and cook them on low until golden brown (optional: you can add your bones here too)
Stir in your tomato paste thoroughly
Follow by stirring in your flour
Pour in your red wine and make sure nothing is stuck to the pan
Add everything else and allow it to simmer for 1 - 3 hours
Strain through a sieve
Top tips:
Too loose? Add a cornflour slurry to help it to thicken up, or simply allow it to simmer for longer.
Too salty? Add a splash of vinegar.
